Recognized every 25th of October, World Pasta Day comes at the perfect time of year when the weather gets chilly and a warm meal officially replaces cold summer dishes.  

The first World Pasta Day was established in Rome during a meeting of the World Pasta Congress (yup, that's a real thing), and the beauty is there's no strict way to celebrate.

Except, of course, indulging in your favorite spaghetti, macaroni, penne, or pasta nest.

Pasta Nests with Caramelized Onions, Raclette & Ham 

Serves: 6 

Preparation time: 15 minutes  

Cooking Time: 20 minutes 

World Pasta Day


2 onions 

1 knob of butter 

350g 10mm Grand'Mere Nests

150ml pouring cream 

150g raclette cheese 

10g thinly sliced Parma ham 



Pinch of sugar 


Peel onions and finely chop them. Heat a frying pan to high heat and add a knob of butter to sauté the onions. Season them with salt. After 5 minutes, lower the heat and let them soften and caramelize with a pinch of sugar.  

Bring a large saucepan of salted water to boil and add the pasta nests. Cook for 8 minutes.  

As the pasta cooks, make the sauce by bringing cream to boil and add caramelized onions, cheese, and pepper. Rest the mixture for 5 minutes. Puree the mixture using a hand-held blender and keep warm.  

Once the pasta is cooked, drain quickly and add to the sauce. Add a little of the cooking water if needed and mix together well. Arrange on a plate with thin slices of Parma ham on top. Season with a twist of the pepper mill.
